Authentic Killarney Guinness Beef Stew - Chef Dennis



This real Killarney Guinness Beef Stew will take you back to the hearty tastes of Ireland. There's something comforting about stews on cold nights. The stew has tender beef, fragrant vegetables, and the rich, malty taste of Guinness stout.

Ingredients:

  • 2 lbs beef chuck, cut into 1-inch cubes
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 onions, chopped
  • 4 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 tablespoons tomato paste
  • 1 cup Guinness stout
  • 2 cups beef broth
  • 2 bay leaves
  • 1 teaspoon thyme
  • 3 potatoes, peeled and cubed
  • 1 cup frozen peas

Instructions:

Add salt and pepper to the beef cubes

Put olive oil in a big pot and heat it over medium-low heat

Brown the beef cubes in groups, then set them aside

You can put onions, garlic, carrots, and celery in the same pot

About 5 minutes of cooking will soften the food

Add the tomato paste and cook for two more minutes

Use Guinness stout to clear out the pot and scrape up any browned bits on the bottom

Put the beef back in the pot with the bay leaves, thyme, and beef broth

Bring to a simmer, then cover and cook for one and a half hours, stirring every now and then

After you add the potatoes, keep simmering with the lid off for about 30 minutes, or until the beef and potatoes are soft

Add the frozen peas and stir them in

Cook for five more minutes

If you need to, add more salt and pepper to taste

If you want, you can serve it hot with fresh parsley on top
