Gluten-Free Grilled Chicken and Avocado Street Tacos
These gluten-free street tacos are bursting with flavor from tender grilled chicken, creamy avocado, and fresh toppings. Perfect for a quick and healthy meal!
Ingredients:
- 1 lb boneless, skinless chicken breasts, pounded to even thickness
- 2 tablespoons olive oil, divided
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and freshly ground black pepper, to taste
- 4 small gluten-free corn tortillas
- 1 ripe avocado, thinly sliced
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
Instructions:
Preheat grill over medium-high heat
In a small bowl, combine 1 tablespoon olive oil, cumin, paprika, garlic powder, salt, and pepper
Brush chicken breasts with the seasoned oil mixture
Grill chicken for 6-8 minutes per side, or until cooked through and juices run clear
Remove from grill and let rest for a few minutes before slicing into thin strips
While chicken is resting, warm the corn tortillas on the grill for about 30 seconds per side
To assemble tacos, place sliced chicken on each tortilla, top with avocado slices, diced red onion, and chopped cilantro
Drizzle remaining olive oil over the tacos and serve with lime wedges for squeezing over the top
