Moroccan-Spiced Carrot Dip



This Moroccan-spiced carrot dip is a flavorful and healthy vegan dip perfect for parties or as a snack. The combination of spices adds depth and warmth, while tahini provides creaminess. It's easy to make and pairs well with gluten-free crackers or vegetable sticks.

Ingredients:

  • 4 large carrots, peeled and chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper, to taste
  • 2 tablespoons tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons water
  • 2 tablespoons chopped fresh cilantro, for garnish

Instructions:

It will take about 10 minutes of steaming to make the carrots soft

Put olive oil in a pan and heat it over medium-low heat

Add the minced garlic and cook for about one minute, until the garlic smells good

Spice up the pan with cumin, coriander, paprika, cinnamon, ginger, cayenne pepper, salt, and pepper

To toast the spices, cook for another two to three minutes, stirring every now and then

Put the carrots and spices in a blender or food processor

Water, lemon juice, and tahini should be added

If you need to, add more water to get the consistency you want

Blend until smooth and creamy

Check the seasoning and make changes if needed

Put the dip in a bowl to serve, and top it with chopped fresh cilantro

Pair it with the gluten-free crackers or veggie sticks of your choice
