Falafel Salad



The crispy falafel, fresh vegetables, and creamy tahini dressing in this Falafel Salad make it a great meal. It's an easy and quick meal that you can eat for lunch or dinner.

Ingredients:

  • 6 falafel balls
  • 2 cups mixed greens lettuce, spinach, arugula
  • 1/2 cucumber, diced
  • 1/2 red bell pepper, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons tahini sauce
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions:

Turn on your oven and heat it up to 375F 190C

On a baking sheet, put the falafel balls

Bake them for 12 to 15 minutes, or until they are hot and crispy

Make the salad while the falafel is baking

Dice the red bell pepper and cucumber and put them in a large bowl

Add the cherry tomatoes, thinly sliced red onion, and crumbled feta cheese

Add the olive oil, lemon juice, salt, and pepper to a small bowl and mix them together using a whisk

This will make the dressing

Take the falafel balls out of the oven and let them cool for one minute

To make the salad, put the falafel balls on top of the mixed greens and then pour the dressing over the top

Gently toss everything together to coat the salad with the dressing and spread the falafel out evenly

Serve your Falafel Salad right away, and if you want, top it with extra feta cheese
