Braised Red Potatoes with Lemon and Chives



These braised red potatoes are cooked until tender in a flavorful broth with hints of lemon and garlic. Finished with fresh chives, they make a vibrant and delicious side dish for any meal.

Ingredients:

  • 1 lb red potatoes, halved or quartered if large
  • 2 tablespoons unsalted butter
  • 2 garlic cloves, minced
  • 1 cup chicken broth
  • 1 lemon, zest and juice
  • 2 tablespoons chopped fresh chives
  • Salt and pepper to taste

Instructions:

In a large skillet, melt the butter over medium heat

Add the potatoes to the skillet, arranging them in a single layer

Cook the potatoes, without stirring, until they are golden brown on one side, about 5 minutes

Add the minced garlic to the skillet and cook until fragrant, about 30 seconds

Pour in the chicken broth and lemon juice, and sprinkle the lemon zest over the potatoes

Season with salt and pepper

Cover the skillet and reduce the heat to low

Simmer until the potatoes are tender, about 15-20 minutes

Remove the lid and increase the heat to medium-high

Cook until the liquid has reduced and thickened slightly, and the potatoes are coated in a glaze, about 5 minutes

Sprinkle the chopped chives over the potatoes before serving
